Overview of the Garda College

The Garda College is the national centre for police training, development and learning within the Irish State. It is a modern campus structure set over eight acres. The campus which is a purpose built residential training facility comprises of four lecture theatres, 17 classrooms, IT facilities, a mock courtroom, a mock Garda Station, physical testing facilities, library, study area, and a restaurant with a seating capacity for 400. There is accommodation for 493 people with an additional 240 acres of undeveloped land available for tactical and operational training exercises. 

The Chef de Partie reports to the Catering Manager.

Chef de Partie responsibilities:

  • Develop and plan menus and daily special;
  • Create prep lists for catering assistant;
  • Have an understanding of food costing and inventory;
  • Maintain standards for food storage, rotation, quality, and appearance;
  • Liaising with the relevant companies for food orders;
  • Monitoring and controlling stock level;
  • Ensure compliance with all health and safety procedures in the kitchen;
  • Ensure compliance with applicable health codes and regulations;
  • Ensure maintenance and cleaning schedules for equipment, storage, and work areas;
  • Demonstrate an experience of large scale catering;
  • Food preparation and rigorous adherence to HACCP.

Any other duties relevant to the post as may be allocated by the Catering Manager.
